You're supposed to zerg one down ASAP as soon as it pops out of its cave or whatever they come out of. So that way you are only fighting 1-2 at most. Same with Alphas. If you get say 6 Alphas you can learn the map and actually kill 1-2 as soon as they spawn so you only have to fight 3/4 at a time
therefore, there can and will be multiple of them in a fight
Sure. Sometimes that DPS depends on finding that one legendary that may or may not drop for the next 200 hours though. In that case, specifically against brood mothers and crawlers, having some resistance really does help. That surge will kill in 2 seconds without resistance, that's like 10 seconds with resistance.
Plus they have an animation for it.
Plus they only have 3 moves.
Plus 2 seconds is forever in a fast paced game where reaction time is needed.
But I understand it can be frustrating. Not everyone has the reaction time which is totally fine!
One tip I can give is look for the animation queue and remember their attack range.
